This process involves none of the heating normally required to get Ivy honey harvested (generally it sets hard in the comb and the whole lot needs melting down). Cold Spun Ivy Honey is taken off the hive the moment it is ready and stable, extracted and immediately bottled, normally setting within 48 hours. It sets firm, but with a silky, buttery texture, giving the scent of Autumn woodland and a unique and never forgotten flavour.
